Olive oil for dressings & sauces

In dressings and sauces the oil is a primary ingredient, so its grade shapes flavour, cost and stability. The right choice depends on whether the olive character should be tasted, and on how the finished product is stored.

What matters

  • Flavour intent - a flavour-led vinaigrette wants extra virgin; a neutral emulsified sauce (mayonnaise, creamy dressing) usually wants a refined oil so the olive note does not dominate.
  • Cost - extra virgin carries a premium; refined and blended oils protect margin where flavour is not the selling point.
  • Cold stability - for refrigerated dressings, ask about winterized / cold-stable oil so it does not cloud or separate in the cold chain.

Many manufacturers use extra virgin for a flavour claim and a refined oil for the functional base, sometimes blended. We will send both specifications and samples so you can taste and test against your own recipe.
